AMU 1221 Spruce St., Boulder; 303-440-0807. There are few restaurants in Boulder that achieve the consistent symphony of flavor, authenticity and overall experience as expertly as Amu. With its menu devoted to traditional dishes (no sushi), chefs schooled in artful presentation and a staff of native-speaking Japanese, Amu is, quite simply, not a place where one does sake bombs. Amu is one of Boulder's best restaurants.
GOLD HILL INN 401 Main St., Gold Hill, Boulder; 303-443-6475, www.goldhillinn.com. If bluegrass music was edible, it would taste like the gastronomic hootenanny served at the Gold Hill Inn. Simple, classic melodies of flavor swing out of the kitchen on trays handled by staff so personable you wonder if you're distantly related. The distinctly western flavors flood the senses with hints of hickory, sage and spicy tomatillo.
ELEPHANT HUT 2500 30th St., Suite 101, Boulder. 303-991-1899 or www.elephanthut.com. Serving original Thai dishes such as Kao Pad and Kra Pao, along with Americanized favorites like Pad Thai, as well as several curries, Elephant Hut pleases the palette as well as the eye. The sumptuous and appetizing food is garnished with elegant (and edible) decorations. The Elephant Hut is a restaurant that has considered every detail of both food and ambience -- though it clearly needs to work out some food supply kinks.
