It's not easy to put on a vaudeville act while you're cooking a multi-course meal, and here's a tip about Ai: The sushi tastes better than the teppanyaki dishes. When I tried the chicken teppanyaki, the teriyaki sauce tasted too sweet and the chicken was dry from a long nap on the grill. And my dining companion's shrimp and scallops -- a measly portion for the $27 price tag -- grew cold while he waited for my chicken to arrive. Part of the problem may have been our chef. He seemed like a newbie. One of his colleagues, I noticed, had wisely saved searing all the meat for last, since it cooked quickly and was less likely to dry out that way.
