Spud Bros., a downtown fries restaurant, plans to close next week, officials said Tuesday.
The restaurant, which opened last year at 2010 10th St., will shutter Aug. 28, store officials posted on the company’s online blog at www.spudbrosblog.org and Twitter account.
“Even while delivering bad news, we can’t overstate our gratitude to our wonderful friends in Boulder, our downtown neighbors, our regular fry fanatics and everyone who has supported Spud Bros. since we opened last year,” members of the “Spuds Bros. team” posted on the blog.
Kim Westover, senior director of innovation at Spud Bros., said the restaurant’s sales were up 30 percent from last year, but the gains are not adequate for the downtown Boulder location. The company’s business plan called for the restaurant to stay open past 11 p.m. on Thursdays, Fridays and Saturdays, but could not get city approval for the later hours, he said.
Not having the option to be able to cater to the late-night crowd was the “arrow in our heart,” he said.
“We have great friends in the community and we’re trying to exit gracefully and let people know that they’re appreciated,” he said.
